Les raisins Pinot noir, Pinot meunier et Chardonnay sont principalement utilisés pour produire presque tout le Champagne, mais de petites quantités de Pinot blanc, Pinot gris, Arbane et Petit Meslier sont également vinifiées. Seuls ces raisins spécifiques cultivés selon les règles d'appellation sur des parcelles désignées au sein de l'appellation peuvent être utilisés pour faire du Champagne.
